40 min Some work Vegetarian

Ingredients

  • 200g noodles
  • 1 can coconut milk
  • 2 tbsp besan
  • 300g vegetables or chicken
  • 1 onion
  • 6 garlic cloves

Method

  1. Blend onion, garlic and ginger to a paste, cook in oil 6 minutes.
  2. Turmeric, chilli powder, then your vegetables or chicken, 5 minutes.
  3. Whisk besan into the coconut milk (it stops it splitting), pour in with 2 cups water.
  4. Simmer 12 minutes. It should be soupy, not thick.
  5. Boil the noodles separately.
  6. Serve: noodles in the bowl, curry poured over, then every topping. The toppings are the dish.

Questions people ask about Khow Suey

How long does Khow Suey take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of coconut milk in Khow Suey?

Use cashews blended smooth with water, about 15 cashews to a cup. Similar body, no coconut flavour.

Can I make Khow Suey ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Khow Suey vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.
