40 min Some work Vegetarian

Ingredients

  • 2 cups rice, washed
  • 1/4 cup roasted peanuts
  • 1 cup grated coconut
  • 1 cup coconut milk
  • 1/2 cup sesame seeds
  • 1 inch ginger, in thin strips
  • 1 cup water
  • 3 tbsp oil
  • 1/4 cup coriander leaves
  • Salt

Method

  1. Toast the sesame seeds in the oil until they crackle, then the ginger for a minute.
  2. Coconut and peanuts in. Low heat, stirring constantly, until golden — it burns in seconds if you walk away.
  3. Drained rice in, fry until translucent, then salt and water.
  4. Cook on medium until the grains are almost done, then stir in the coconut milk.
  5. Simmer until absorbed. Press it into a bowl, turn it out, coriander over the top. Good hot or cold.

Questions people ask about Burmese Coconut Rice

How long does Burmese Coconut Rice take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Burmese Coconut Rice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Burmese Coconut Rice ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Burmese Coconut Rice vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.
