Goulash

Paprika, onions, slow heat. Almost no work after the first twenty minutes.

100 min Some work Non-vegetarian

Ingredients

  • 800g mutton or beef, cubed
  • 5 onions, sliced
  • 4 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 2 capsicum, chopped
  • 3 tomatoes
  • 3 potatoes, chunks
  • 4 garlic cloves
  • 3 tbsp oil or lard
  • Bread or rice

Method

  1. Onions to meat should be roughly one to one by weight. That's the recipe most people get wrong.
  2. Cook the onions slowly in oil for 20 minutes until completely soft and golden.
  3. Brown the meat hard in a separate pan, then add it in.
  4. Take the pot OFF the heat before adding the paprika — paprika burns and turns bitter within seconds on direct heat. Stir it through, then return to low.
  5. Caraway, garlic, tomatoes, capsicum and water to just cover. Simmer covered 70 minutes.
  6. Potatoes for the last 25 minutes. It should be thick, not soupy. Bread.

Questions people ask about Goulash

How long does Goulash take?

About 100 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of mutton in Goulash?

Use chicken thighs, but halve the cooking time. Jackfruit works for a vegetarian version and holds up to long cooking.

Can I make Goulash ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Can I make Goulash vegetarian?

Yes. Replace the mutton with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
