What to cook with mutton
Mutton wants time and cannot be hurried. Every good mutton dish is either pressure cooked for six or seven whistles or simmered for well over an hour.
Brown it hard first, in batches, with the lid off. Once the lid goes on there is no more browning to be had, and browning is where most of the flavour comes from.
Worth knowing: Bone-in, always. The bones are what give the gravy body.
