Rogan Josh

Kashmiri lamb, deep red, no tomatoes and no browning. Different from every other mutton curry.

80 min A proper cook Non-vegetarian

Ingredients

  • 800g mutton on the bone
  • 1 cup curd, whisked
  • 3 tbsp kashmiri chilli powder
  • 1 tsp fennel powder
  • 1 tsp dry ginger powder (sonth)
  • 1 tsp garam masala
  • Whole spices: cloves, cardamom, cinnamon, bay
  • Hing
  • 5 tbsp ghee

Method

  1. No onions and no tomatoes. That's not an omission, it's the recipe.
  2. Whole spices and hing in ghee, then the mutton. Sear hard on high for 10 minutes till browned all over.
  3. Take the pot off the heat, add the whisked curd, then return to low and stir constantly till it's absorbed.
  4. Chilli powder, fennel, dry ginger, salt. Fry 5 minutes — the colour comes from kashmiri chilli, not from browning.
  5. 2 cups hot water, cover, simmer 50 minutes (or pressure cook 6 whistles) till the meat falls off the bone.
  6. Garam masala at the end. The gravy should be thin and red with ghee floating on top.

Questions people ask about Rogan Josh

How long does Rogan Josh take?

About 80 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of mutton in Rogan Josh?

Use chicken thighs, but halve the cooking time. Jackfruit works for a vegetarian version and holds up to long cooking.

Can I make Rogan Josh ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Rogan Josh vegetarian?

Yes. Replace the mutton with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.

Do I need a pressure cooker for Rogan Josh?

A cooker is faster but not essential. In an open pot, expect roughly three times the cooking time and keep an eye on the water level, topping up with hot water rather than cold.
