Fudgy Brownies

The difference between fudgy and cakey is flour and mixing. This one is fudgy.

45 min Some work Vegetarian

Ingredients

  • 200g dark chocolate
  • 170g butter
  • 1 cup sugar
  • 3 eggs
  • 3/4 cup maida
  • 1/4 cup cocoa powder
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 cup walnuts (optional)

Method

  1. Melt chocolate and butter together over a pan of simmering water, or in short microwave bursts. Don't let it get hot.
  2. Whisk in the sugar, then the eggs one at a time, beating well. That beating is what gives the shiny paper-thin crust.
  3. Fold in the flour, cocoa and salt with a spatula until JUST combined. More flour or more mixing gives you cake, not brownie.
  4. Into a lined tin, 180°C for 22-25 minutes.
  5. The centre should still wobble slightly and a skewer should come out with wet crumbs. A clean skewer means overbaked.
  6. Cool COMPLETELY in the tin, ideally chilled, before cutting.

What do you serve with Fudgy Brownies?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
