English Muffins

Cooked on a griddle, not baked. Split them with a fork, never a knife.

100 min Some work Vegetarian No oven needed

Ingredients

  • 7g dried yeast
  • 2 tbsp caster sugar
  • 300ml lukewarm milk
  • 425g plain flour
  • 50g butter, melted
  • A pinch of sea salt
  • Semolina or cornmeal for dusting

Method

  1. Stir the yeast and sugar into the milk, 5 minutes until foamy.
  2. Flour, butter, salt and the yeast mixture to a soft dough. A little more milk or flour as needed.
  3. Knead until smooth and elastic, then prove 1 hour until doubled.
  4. Knock back, roll to 2cm thick, and cut rounds. Thick — thin dough gives you biscuits, not muffins.
  5. Dust both sides with semolina and prove 30 minutes.
  6. Cook on a dry, greased pan on low heat, about 8 minutes a side, until browned and cooked through.
  7. Split with a fork to keep the rough interior that holds butter.

Questions people ask about English Muffins

How long does English Muffins take?

About 100 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in English Muffins?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make English Muffins ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is English Muffins vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make English Muffins without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.
