Corn Chaat

Ten minutes, no cooking beyond boiling corn, and everyone eats it.

12 min Easy Vegetarian

Ingredients

  • 3 cups sweet corn, boiled
  • 1 onion, 1 tomato, 1 cucumber, finely chopped
  • 1 tsp chaat masala
  • 1/2 tsp red chilli powder
  • 1/2 tsp roasted cumin powder
  • 1 lemon
  • 2 tbsp butter
  • Coriander
  • Sev (optional)

Method

  1. Boil the corn 6 minutes, drain well, then toss it in butter while hot.
  2. Cool slightly — hot corn makes the raw vegetables go limp.
  3. Mix in onion, tomato, cucumber and coriander.
  4. Chaat masala, chilli powder, roasted cumin, salt and a lot of lemon.
  5. Taste and add more lemon. It always needs more.
  6. Sev on top at the table.

Questions people ask about Corn Chaat

How long does Corn Chaat take?

About 12 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of onion in Corn Chaat?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Corn Chaat ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Corn Chaat vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Corn Chaat?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
