Congee

Rice porridge. The gentlest thing you can cook, and endlessly adjustable.

45 min Easy Vegetarian

Ingredients

  • 3/4 cup rice
  • 8 cups water or stock
  • 2 inch ginger, sliced
  • 6 garlic cloves
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Toppings: spring onion, fried garlic, chilli oil, boiled or century egg, peanuts

Method

  1. Rinse the rice, then freeze it for 20 minutes if you have time — it breaks down much faster.
  2. Rice, water, ginger and garlic in a big pot. Boil, then lowest heat.
  3. 45 minutes, stirring every 10 so it doesn't stick. It's ready when the grains have dissolved into cream.
  4. Thin with hot water whenever it gets too thick.
  5. Salt, soy, sesame oil.
  6. The toppings do the work: spring onion, crispy garlic, chilli oil, an egg.

Questions people ask about Congee

How long does Congee take?

About 45 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Congee?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Congee ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Congee vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.
