Chocolate Chip Cookies

The chill is the difference between flat discs and thick chewy cookies.

45 min Some work Vegetarian

Ingredients

  • 2 cups maida
  • 170g soft butter
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1.5 cups chocolate chips or chopped chocolate

Method

  1. Cream butter with both sugars for 3 minutes. Brown sugar is what makes them chewy; all-white makes them crisp.
  2. Egg and vanilla, then fold in flour, soda and salt. Don't overwork it.
  3. Chocolate folded through.
  4. Chill the dough at least 30 minutes, ideally overnight. Warm dough spreads into thin wafers in the oven.
  5. Balls on a lined tray with plenty of space. 180°C for 10-12 minutes.
  6. Take them out when the edges are set and the middles still look underdone. They finish on the hot tray.

Questions people ask about Chocolate Chip Cookies

How long does Chocolate Chip Cookies take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Chocolate Chip Cookies?

Cream butter with both sugars for 3 minutes. Brown sugar is what makes them chewy; all-white makes them crisp.

What can I use instead of maida in Chocolate Chip Cookies?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Chocolate Chip Cookies ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Chocolate Chip Cookies vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Chocolate Chip Cookies?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Chocolate Chip Cookies?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
