Chicken Popcorn

Small pieces, big crunch, twenty-five minutes. Children negotiate for these.

30 min Some work Non-vegetarian

Ingredients

  • 600g boneless chicken, small cubes
  • 1/2 cup curd or buttermilk
  • 1.5 cups maida
  • 1/4 cup cornflour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp oregano
  • 1 egg
  • Oil to fry

Method

  1. Marinate the chicken in curd, salt and pepper for 30 minutes. The acid tenderises small pieces fast.
  2. Dry mix: maida, cornflour, paprika, garlic powder, oregano, salt, pepper.
  3. Drizzle 2 tbsp of the curd marinade into the dry mix and rub it through with your fingers so shaggy lumps form. Those lumps are what become the craggy crust.
  4. Toss the chicken in the flour, pressing hard.
  5. Fry at medium-high in batches, 4 minutes, till deep golden. Small pieces cook fast.
  6. Drain on a rack. Extra salt while hot.

Questions people ask about Chicken Popcorn

How long does Chicken Popcorn take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of chicken in Chicken Popcorn?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Chicken Popcorn ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Chicken Popcorn vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
