Ingredients

  • 360g plain flour
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 85g butter, softened
  • 240ml cold milk or buttermilk
  • Melted butter for glazing

Method

  1. Mix flour, salt, baking powder and sugar.
  2. Rub the butter in to fine breadcrumbs.
  3. Milk poured over, mixed quickly and gently for 15 seconds only. A rough dough is what you want.
  4. Onto a floured surface, shaped to a 2cm-thick rectangle. Fold into thirds and roll back to 2cm — that fold is where the layers come from.
  5. Cut into 7cm squares with a sharp knife. Don't twist a cutter; it seals the edges and they won't rise.
  6. 220°C for 20 minutes, brushed with melted butter as they come out.
