Cherry Pie

A double crust, cornflour in the fruit, and slits cut in the lid to let steam out.

60 min A proper cook Vegetarian

Ingredients

  • 700g cherries, pitted
  • 1/4 tsp vanilla extract
  • 75g brown sugar
  • 75g granulated sugar
  • 30g cornflour
  • 450g shortcrust pastry
  • 1 tbsp cold butter, in small pieces

Method

  1. Mix the cherries, vanilla, both sugars (keeping a tablespoon back) and the cornflour. More cornflour if the fruit looks wet — that's what stops a runny pie.
  2. Roll the pastry to 3mm between sheets of baking paper, and divide it for a base and a lid.
  3. Ease the base into the dish, pushing it into the corners.
  4. Filling in, butter dotted over.
  5. Lid on, edges crimped to seal.
  6. Cut several slits in the lid. Without them, steam splits the pie open.
  7. Brush with milk, sprinkle the reserved sugar. 200°C for 40 minutes.

Questions people ask about Cherry Pie

How long does Cherry Pie take?

About 60 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

Can I make Cherry Pie ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Cherry Pie vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Cherry Pie?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.
