45 min Some work Vegetarian

Ingredients

  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 300g plain flour
  • 200g butter, softened
  • 90g cheddar, grated
  • 50g parmesan, grated
  • 1/2 tsp salt
  • 1/2 tsp nutmeg

Method

  1. Stir the flaxseed into the water and leave 15 minutes to gel.
  2. Flour, butter, both cheeses, salt and nutmeg into a bowl, then the flax gel.
  3. Bring it together into a soft dough with your hands. A splash of water if it's dry.
  4. Wrap and chill 30-40 minutes.
  5. Roll to 5mm and cut with a small round cutter.
  6. Prick each one with a fork — that stops them ballooning.
  7. 180°C for 15 minutes until golden.

Questions people ask about Cheese Crackers

How long does Cheese Crackers take?

About 45 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of maida in Cheese Crackers?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Cheese Crackers ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Cheese Crackers vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Cheese Crackers?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Cheese Crackers?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
