Braised Aubergines

Fried until collapsing, then glazed. The reason people who hate brinjal change their mind.

30 min Some work Vegetarian

Ingredients

  • 500g aubergines, in large pieces
  • 1 tbsp ginger-garlic paste
  • 5 dried red chillies, chopped
  • 1 tsp vinegar
  • 1 tsp soy sauce
  • 1 tbsp cornflour in 50ml water
  • 1 tsp sesame oil
  • Sugar and salt
  • Oil for frying

Method

  1. Soak the aubergine in salted water for 10 minutes, then dry it completely. Wet aubergine in hot oil is dangerous and soggy.
  2. Fry in hot oil until pale brown and soft. Drain.
  3. In 2 tbsp oil, fry the ginger-garlic paste for a minute, then salt, sugar, vinegar and soy.
  4. Cornflour water in, stir until the sauce goes clear.
  5. Return the aubergine, coat, and finish with sesame oil off the heat.

Questions people ask about Braised Aubergines

How long does Braised Aubergines take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of soy sauce in Braised Aubergines?

Use tamari if you need it gluten-free. Dark soy is saltier, so use less.

Can I make Braised Aubergines ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Braised Aubergines vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Braised Aubergines?

Steamed rice. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
