Black and White Cookies
Half vanilla icing, half chocolate. Soft and cakey rather than crisp.
Ingredients
- 300g plain flour
- 30g cornflour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 250g sugar
- 120ml sunflower oil
- 240ml milk
- 2 tsp vanilla extract
- Icing: 200g icing sugar, 2 tbsp hot water, 1/4 tsp vanilla
- 170g chocolate chips, 1 tbsp butter
Method
- Mix flour, cornflour, baking powder, soda and salt.
- Beat the sugar and oil until creamy, then the milk and vanilla.
- Dry into wet in several batches, beating between, to a thick batter.
- Quarter-cup spoonfuls on lined trays, 7cm apart — they spread wide.
- 180°C for 15-18 minutes until just golden.
- Five minutes on the tray, then cool completely.
- Mix the white icing, spread over half of each cookie. Melt the chocolate with the butter and do the other half. Ice the flat underside — it's smoother.
