Bhel Puri

No cooking at all. Ten minutes, and it's dinner if you make enough of it.

12 min Easy Vegetarian

Ingredients

  • 6 cups puffed rice (murmura)
  • 1 cup sev
  • 1 onion, 1 tomato, finely chopped
  • 1 boiled potato, cubed
  • 3 tbsp green chutney
  • 3 tbsp tamarind chutney
  • 1 tsp chaat masala
  • 1 lemon
  • Coriander
  • Papdi, crushed

Method

  1. Dry roast the puffed rice for 2 minutes if it's gone soft. Limp murmura ruins bhel.
  2. Have everything chopped and ready before you start mixing — this comes together in 60 seconds.
  3. Puffed rice, potato, onion, tomato in a big bowl.
  4. Both chutneys, chaat masala, salt, lemon. Toss fast with your hands.
  5. Sev, crushed papdi and coriander last.
  6. Serve instantly. Bhel is soggy within four minutes and there is no fixing it.

Questions people ask about Bhel Puri

How long does Bhel Puri take?

About 12 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of onion in Bhel Puri?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Bhel Puri ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Bhel Puri vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Bhel Puri?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
