45 min Easy Vegetarian

Ingredients

  • 250g plain flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 80ml sunflower oil
  • 200g caster sugar
  • 500g bananas, mashed (about 4)

Method

  1. Sift flour, soda and salt together.
  2. Beat the oil and sugar until foamy, then the mashed banana, water and vanilla.
  3. Dry into wet, stirred to a lumpy batter. Muffin batter should look undermixed — smooth batter bakes tough.
  4. Fold in the chocolate chips and walnuts.
  5. Cases three-quarters full.
  6. 180°C for 20-25 minutes.
  7. Five minutes in the tin, then onto a rack.
