Baba Ganoush

Smoky aubergine dip. Twenty-five minutes, and the flame does the work.

25 min Easy Vegetarian

Ingredients

  • 2 large brinjals
  • 3 tbsp tahini or thick curd
  • 4 garlic cloves, crushed
  • 2 lemons
  • 4 tbsp olive oil
  • 1 tsp cumin
  • Parsley or coriander
  • Pomegranate (optional)
  • Bread

Method

  1. Roast the brinjals directly on an open flame, turning, until the skin is completely black and they collapse. 12 minutes. An oven will not give you the smoke.
  2. Put them in a covered bowl for 5 minutes — the steam loosens the skin.
  3. Peel, then sit the flesh in a sieve for 10 minutes to drain. Watery baba ganoush is the usual mistake.
  4. Mash with a fork, not a blender. Texture matters.
  5. Tahini, crushed garlic, lemon, cumin, salt, olive oil.
  6. Spread flat, well in the middle, more olive oil, herbs. Warm bread.

Questions people ask about Baba Ganoush

How long does Baba Ganoush take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of curd in Baba Ganoush?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Baba Ganoush ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Baba Ganoush vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Baba Ganoush?

Warm bread. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
