Tabbouleh

A parsley salad with a little bulgur, not the other way round. Fifteen minutes, no cooking.

20 min Easy Vegetarian

Ingredients

  • 1/2 cup fine bulgur (or couscous)
  • 4 cups parsley, very finely chopped
  • 1 cup mint, chopped
  • 4 tomatoes, finely diced
  • 1 onion or 4 spring onions
  • 1/2 cup olive oil
  • 3 lemons
  • Salt, black pepper

Method

  1. Soak the bulgur in the juice of one lemon and 1/4 cup water for 20 minutes. It softens without boiling.
  2. Chop the parsley by hand with a sharp knife. A blender bruises it into a wet green paste.
  3. Dice the tomatoes and let them drain in a sieve for 10 minutes.
  4. Combine everything with olive oil, the rest of the lemon, salt and pepper.
  5. It should look overwhelmingly green with grain scattered through it. If it looks like a grain salad, add more parsley.
  6. Rest 15 minutes. Lettuce leaves to scoop.

Questions people ask about Tabbouleh

How long does Tabbouleh take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of tomato in Tabbouleh?

Use canned chopped tomatoes, roughly 1 can per 4 fresh. Add a pinch of sugar to offset the acidity.

Can I make Tabbouleh ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Tabbouleh vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Tabbouleh?

Flatbread, and a sharp salad to cut the richness. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
