Avial

Every leftover vegetable in one coconut-and-curd dish. Zero waste, real flavour.

35 min Some work Vegetarian

Ingredients

  • 4 cups mixed vegetables in thick sticks (drumstick, carrot, beans, raw banana, lauki)
  • 1 cup grated coconut
  • 1 tsp cumin
  • 3 green chillies
  • 1 cup sour curd
  • 20 curry leaves
  • 3 tbsp coconut oil
  • 1/2 tsp turmeric

Method

  1. Cut every vegetable to the same size sticks so they cook evenly.
  2. Boil with turmeric, salt and just enough water to come halfway up. Cover, 12 minutes — tender but not falling apart.
  3. Coarsely grind coconut with cumin and green chillies. Do not make it a smooth paste.
  4. Fold it in, cook 4 minutes.
  5. Off the heat, stir in the curd. Never boil after this.
  6. Raw coconut oil and curry leaves on top. That raw oil is the whole dish.

Questions people ask about Avial

How long does Avial take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Avial?

Coarsely grind coconut with cumin and green chillies. Do not make it a smooth paste.

What can I use instead of curd in Avial?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Avial ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Avial vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Avial?

Steamed rice with a spoon of ghee, and a papad if you have one. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
