Yogurt Bundt Cake

Yogurt beaten with sugar until it foams. No eggs, no creaming, one bowl.

75 min Easy Vegetarian

Ingredients

  • 500g yogurt
  • 300g granulated sugar
  • 1 tsp baking soda
  • 2 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 240ml sunflower oil
  • 360g plain flour

Method

  1. Beat the yogurt and sugar hard for a full 5 minutes. This is where the air comes from.
  2. Soda and baking powder in, beat again, then leave it 3 minutes until visibly bubbly.
  3. Stir in vanilla and oil.
  4. Sift the flour in over four additions, folding after each. All at once and it goes heavy.
  5. Greased and floured bundt tin.
  6. 200°C for 10 minutes, then drop to 170°C for 50 minutes more.
  7. Thirty minutes in the tin before turning out — a bundt tears if you rush it.

Questions people ask about Yogurt Bundt Cake

How long does Yogurt Bundt Cake take?

About 75 minutes from starting to sitting down, and it is straightforward. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of curd in Yogurt Bundt Cake?

Use thick Greek yogurt, or regular yogurt hung in a cloth for 20 minutes. Thin yogurt splits more easily, so always take the pan off the heat first.

Can I make Yogurt Bundt Cake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Yogurt Bundt Cake vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

Do I need an oven for Yogurt Bundt Cake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Yogurt Bundt Cake?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
