Apple Cinnamon Cake

Half the apples go in the batter, half on top. Cinnamon does the rest.

65 min Some work Vegetarian

Ingredients

  • 4 apples, peeled and diced
  • 1.5 cups maida
  • 1 cup sugar
  • 150g butter
  • 3 eggs or 3/4 cup curd
  • 2 tsp cinnamon
  • 1.5 tsp baking powder
  • 2 tbsp brown sugar for the top

Method

  1. Toss the diced apple with 1 tsp cinnamon and 1 tbsp flour. The flour coating stops them sinking to the bottom.
  2. Cream butter and sugar, add eggs, then fold in flour, baking powder and remaining cinnamon.
  3. Fold in half the apples.
  4. Batter into the tin, rest of the apples arranged on top, brown sugar scattered over.
  5. 180°C for 45-50 minutes. Cover with foil at 35 minutes if the top browns too fast.
  6. Warm, with cream or curd.

Questions people ask about Apple Cinnamon Cake

How long does Apple Cinnamon Cake take?

About 65 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Apple Cinnamon Cake?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Apple Cinnamon Cake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Apple Cinnamon Cake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Apple Cinnamon Cake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Apple Cinnamon Cake?

Warm, with cream or curd. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
