Whatever vegetable you have, in besan batter. The default answer to rain.

25 min Easy Vegetarian

Ingredients

  • Potatoes, aubergine, onion, cauliflower or chillies, sliced thin
  • 3/4 cup besan
  • 1/2 cup water
  • 1/2 tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander seeds, crushed
  • A pinch of baking soda
  • Oil for frying
  • Salt

Method

  1. Slice everything to a similar thickness or half of it will be raw.
  2. Whisk the batter smooth — thin enough to coat, thick enough to cling.
  3. Dip and fry in hot oil until golden.
  4. Drain on paper, salt while hot. Spoonfuls of plain batter fried on their own are pakoras too.

Questions people ask about Vegetable Pakoras

How long does Vegetable Pakoras take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of besan in Vegetable Pakoras?

Use chickpea flour is the same thing. At a push, rice flour binds but will not taste the same.

Can I make Vegetable Pakoras ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Vegetable Pakoras vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Vegetable Pakoras?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
