Three-Layer Kulfi Cake

Vanilla, pineapple and chocolate frozen in layers. A weekend project that ends well.

90 min A proper cook Vegetarian No oven needed

Ingredients

  • 2 litres milk
  • 1 cup sugar
  • 3 tsp agar agar powder
  • 1/2 tsp vanilla custard powder
  • 1/2 tsp pineapple custard powder
  • 2 tsp cocoa powder
  • 3/4 cup milk powder
  • Pineapple and vanilla essence
  • Yellow colour
  • Chopped nuts

Method

  1. Reduce the milk by half, dissolve the sugar, then divide into three pans.
  2. Vanilla custard powder and a teaspoon of agar agar into the first. Pineapple custard powder and agar agar into the second. Just agar agar into the third.
  3. Cool, then beat 1/4 cup milk powder into each — plus vanilla essence, pineapple essence with yellow colour, and cocoa respectively.
  4. Freeze all three until part-set, then beat each smooth again.
  5. Layer in one tin: pineapple, then chocolate, then vanilla. Freeze firm.
  6. Cut in slices, nuts scattered over.

Questions people ask about Three-Layer Kulfi Cake

How long does Three-Layer Kulfi Cake take?

About 90 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

Can I make Three-Layer Kulfi Cake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Three-Layer Kulfi Cake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Three-Layer Kulfi Cake without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Three-Layer Kulfi Cake?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
