Stuffed Baked Potatoes

Bake, scoop, mash, refill, brown. Almost all the time is unattended.

80 min Easy Vegetarian

Ingredients

  • 4 large potatoes
  • 1.5 cups grated cheese
  • 1/2 cup milk or cream
  • 3 tbsp butter
  • 1 onion or 4 spring onions
  • 1 cup corn or peas
  • 1 tsp chilli flakes
  • Curd, coriander

Method

  1. Prick the potatoes all over, rub with oil and plenty of salt. The salt crust is why baked potato skin is worth eating.
  2. 200°C directly on the oven rack, 55-60 minutes. Not wrapped in foil — foil steams them and you get soft skin.
  3. Cut a lid off each, scoop out the flesh leaving a 1cm shell so they hold their shape.
  4. Mash the flesh with butter, milk, most of the cheese, spring onion, corn, salt and chilli flakes.
  5. Pile it back in, mounded high, rest of the cheese on top.
  6. Back in at 200°C for 15 minutes until browned. Curd and coriander.
