70 min Easy Vegetarian

  • 420g oats
  • 85g pecans, roughly chopped
  • 90g almonds, roughly chopped
  • 50g coconut flakes
  • 70g wholemeal flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 170ml coconut oil, melted
  • 175g maple syrup
  • 1 tsp vanilla extract

Method

  1. Mix oats, pecans, almonds, coconut flakes, flour, salt and cinnamon.
  2. Stir the coconut oil, maple syrup and vanilla together until smooth.
  3. Pour over and stir until everything is coated.
  4. Spread in a thin, even layer on a lined tray. Piled up, it steams instead of toasting.

  6. Cool completely on the tray — that's when it crisps. Airtight jar.

Questions people ask about Granola

How long does Granola take?

About 70 minutes from starting to sitting down, and it is straightforward. A good part of that is unattended, so you can get on with something else once it is going.

Can I make Granola ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Granola vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

Do I need an oven for Granola?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Granola?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
