25 min Easy Vegetarian

Ingredients

  • 2 cups rice, cooked
  • 2 large onions, sliced
  • 4 tomatoes, chopped
  • 4 capsicums, chopped
  • 2 garlic cloves, pounded
  • 3 green chillies, roasted
  • 1/2 tsp turmeric
  • 1 tsp paprika
  • Oil
  • Salt

Method

  1. Roast the chillies dry in the pan for a few minutes first. It changes them completely.
  2. Fry the onions until transparent, then the garlic, turmeric and chillies for a minute.
  3. Tomatoes and capsicum, four minutes — they should soften but keep some shape.
  4. Cooked rice, salt and paprika. Three minutes on low, folding rather than stirring.

Questions people ask about Spanish Rice

How long does Spanish Rice take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of rice in Spanish Rice?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Spanish Rice ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Spanish Rice vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.
