Paella

One pan, no stirring, and a crisp layer of rice at the bottom that people fight over.

55 min A proper cook Non-vegetarian

Ingredients

  • 2 cups short grain or bomba rice
  • 400g chicken, cubed
  • 300g prawns
  • 1 onion, 1 capsicum, chopped
  • 4 tomatoes, grated
  • 6 garlic cloves
  • 1 tsp saffron in warm water
  • 2 tsp paprika
  • 5 cups hot stock
  • 1 cup peas
  • Lemon
  • Olive oil

Method

  1. Brown the chicken in olive oil in a wide shallow pan. Take out.
  2. Onion, capsicum and garlic, then grated tomato and paprika. Cook 8 minutes till dark and jammy.
  3. Rice in, stirred for 2 minutes to coat.
  4. Hot stock and saffron water, chicken back in. Spread everything flat and level.
  5. Now do not stir again. Not once. Stirring makes risotto; paella needs the rice undisturbed to form the crust.
  6. 18 minutes on medium, prawns and peas pressed in for the last 6. Listen for a faint crackle at the end — that's the socarrat. Rest 5 minutes, lemon.

Questions people ask about Paella

How long does Paella take?

About 55 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Paella?

Now do not stir again. Not once. Stirring makes risotto; paella needs the rice undisturbed to form the crust.

What can I use instead of rice in Paella?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Paella ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Paella vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
