South Indian Filter Coffee

Decoction, boiling milk, and pouring it back and forth until it froths. No shortcuts exist.

20 min Some work Vegetarian

Ingredients

  • 4 tbsp coarse filter coffee powder
  • 200ml boiling water
  • 400ml full fat milk
  • Sugar to taste

Method

  1. Pack the coffee into the filter's upper chamber and press it down with the disc — firmly, but not so hard the water cannot pass.
  2. Pour in boiling water, cover, and leave it. The decoction takes 15 minutes and cannot be hurried.
  3. Boil the milk separately. It must be properly boiling, not warm.
  4. One part decoction to three parts milk, sugar in.
  5. Now pour it between the tumbler and the dabara from a height, back and forth, six or seven times. That is what makes the froth and cools it to drinking temperature.
