Mint Coconut Chutney

The one chutney worth always having. Five minutes in a blender.

5 min Easy Vegetarian

Ingredients

  • 6 tbsp fresh grated coconut
  • A small piece of ginger, minced
  • 2 green chillies
  • A large bunch of mint leaves
  • Juice of 2 lemons
  • Salt

Method

  1. Pull the mint leaves off the stems and throw the stems away — they turn it bitter.
  2. Everything into the blender with as little water as it will take.
  3. Blend smooth, taste for salt and lemon.
  4. Keeps three or four days refrigerated. It darkens after that but stays fine.

How long does Mint Coconut Chutney take?

About 5 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

Can I make Mint Coconut Chutney ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Mint Coconut Chutney vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made mint coconut chutney keep?

A fresh chutney is a few days in the fridge; a cooked, sugared one keeps for months in a sterilised jar. Use a dry spoon every time — water is what turns it.
