Sol Kadhi

Kokum and coconut milk, pink and sour. The Konkan answer to a heavy meal.

20 min Some work Vegetarian

Ingredients

  • 10 dried kokum petals
  • 250ml warm water
  • 400ml thick coconut milk
  • 3 garlic cloves
  • 1 green chilli
  • 1/2 tsp cumin seeds
  • Salt to taste
  • Coriander leaves

Method

  1. Soak the kokum in warm water for 15 minutes, then squeeze the petals hard and keep the pink liquid.
  2. Crush the garlic, chilli and cumin to a rough paste.
  3. Stir the paste into the coconut milk with salt.
  4. Kokum water added gradually, tasting as you go — all of it at once and it turns too sour to drink.
  5. Never boil it. Heat splits the coconut milk and kills the colour.
  6. Serve cool, with coriander. Good in a glass or poured over plain rice.

Questions people ask about Sol Kadhi

How long does Sol Kadhi take?

About 20 minutes from starting to sitting down, and it is a bit of work. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What is the one thing to get right in Sol Kadhi?

Never boil it. Heat splits the coconut milk and kills the colour.

What can I use instead of coconut milk in Sol Kadhi?

Use cashews blended smooth with water, about 15 cashews to a cup. Similar body, no coconut flavour.

Can I make Sol Kadhi ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sol Kadhi vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

How long does home-made sol kadhi keep?

Best made and drunk the same day. Anything blended with fruit separates within a couple of hours, so stir or shake it before pouring.
