Phulka Roti

Flour, water, salt. The bread everything else on this site is eaten with.

25 min Some work Vegetarian No oven needed

Ingredients

  • 250g whole wheat flour
  • 125ml water
  • Salt
  • Ghee to finish

Method

  1. Knead a stiff dough and let it rest 15 minutes. Rested dough rolls thin without tearing.
  2. Roll each ball into a thin circle, no thicker than half a centimetre, dusting as you go.
  3. Cook on a hot tawa until pale spots appear, flip, then press the edges with a cloth so it puffs.
  4. Smear with ghee and stack under a cloth so they stay soft.

Questions people ask about Phulka Roti

How long does Phulka Roti take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of atta in Phulka Roti?

Use plain flour, though the dough will be softer and need less water.

Can I make Phulka Roti ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Phulka Roti vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Phulka Roti without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Phulka Roti?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
