Ingredients

  • 200g digestive biscuits
  • 90g butter, melted
  • 800g cream cheese
  • 250g sugar
  • 40g cornflour
  • 200ml sour cream
  • 120ml cream
  • 2 tsp vanilla extract
  • Zest of 1 lemon

Method

  1. Wrap the outside of a 23cm springform tin in a double layer of foil.
  2. Crush the biscuits, mix with butter, press into the base, bake 10 minutes at 180°C, cool.
  3. Beat the cream cheese smooth on low speed. Low — high speed beats in air and air makes cracks.
  4. Sugar and cornflour, then sour cream, cream, vanilla and zest. Stop the moment it's smooth.
  5. Pour over the base, stand in a roasting tin, pour in 4cm of hot water.
  6. 160°C for 1 hour 10 minutes. The middle should still wobble.
  7. Oven off, door ajar, one hour. Then room temperature, then overnight in the fridge.
  8. Run a knife round the edge before releasing the ring.

Questions people ask about New York Cheesecake

How long does New York Cheesecake take?

About 110 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of cream cheese in New York Cheesecake?

Use hung curd, thickened overnight in a cloth. Tangier and less sweet, so adjust the sugar.

Can I make New York Cheesecake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is New York Cheesecake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for New York Cheesecake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.
