110 min Some work Vegetarian

Ingredients

  • 120ml lukewarm water
  • 2 tbsp sugar
  • 14g dried yeast
  • 810g plain flour, plus extra
  • 490ml lukewarm milk
  • 2 tbsp sunflower oil
  • 2 tsp salt
  • Sesame seeds

Method

  1. Bloom the yeast and sugar in the water, 5 minutes.
  2. Flour, milk, oil and salt in, mixed until the dough pulls from the bowl sides. More flour if it's wet.
  3. Knead 5-10 minutes until smooth. It's a loose dough — a bowl scraper helps you fold it over.
  4. Oiled bowl, turned to coat, damp cloth over, proved until doubled.
  5. Divide into 18, roll into balls, and flatten each firmly. Left round, they bake into domes rather than buns.
  6. Prove 30 minutes on lined trays.
  7. Brushed with oil, sesame seeds on.
  8. 200°C for 20 minutes.
