Margherita Pizza

A proper base needs time, not skill. Start the dough in the morning, eat at eight.

90 min A proper cook Vegetarian

Ingredients

  • 3 cups maida or bread flour
  • 1 tsp instant yeast
  • 1 tsp salt
  • 1.25 cups warm water
  • 1 can whole tomatoes
  • 300g mozzarella
  • Basil
  • Olive oil

Method

  1. Dough: flour, yeast, salt, water. Mix into a shaggy mess, then knead 10 minutes till smooth. Rise 4 hours at room temperature, or overnight in the fridge — long and slow is where the flavour comes from.
  2. Sauce: crush the canned tomatoes by hand with salt and a little olive oil. Do not cook it. It cooks on the pizza.
  3. Oven as hot as it goes, 250°C+, with a tray or stone inside for 45 minutes.
  4. Stretch the dough by hand from the centre outwards, leaving a thick rim. Never use a rolling pin — it crushes the air out.
  5. Thin sauce, torn mozzarella, olive oil. Less than you think.
  6. 8-10 minutes till the crust blisters. Basil after it comes out, not before.

Questions people ask about Margherita Pizza

How long does Margherita Pizza take?

About 90 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Margherita Pizza?

Sauce: crush the canned tomatoes by hand with salt and a little olive oil. Do not cook it. It cooks on the pizza.

What can I use instead of maida in Margherita Pizza?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Margherita Pizza ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Margherita Pizza vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Margherita Pizza?

A green salad and bread. Nothing else needed. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
