60 min A proper cook Vegetarian

Ingredients

  • 300g cold butter
  • 110g icing sugar, plus a lot extra for dusting
  • 1 1/2 tbsp grape juice
  • 1 tsp vanilla essence
  • 600g plain flour
  • 1/2 tsp baking powder
  • 100g roasted almonds, roughly chopped
  • Rose water for sprinkling

Method

  1. Cream the butter and icing sugar for a full 20 minutes, scraping down every few minutes. That long beat is the whole texture.
  2. Mix grape juice and vanilla separately. Sift flour and baking powder separately.
  3. Add dry and wet to the butter in alternating batches, to a soft dough. Fold in the almonds.
  4. Walnut-sized balls, slightly flattened, 5cm apart.
  5. 180°C for 18-20 minutes until barely golden.
  6. Cool, then sprinkle with rose water and bury in icing sugar. Be generous — they should look like snow.

Questions people ask about Kourabiedes

How long does Kourabiedes take?

About 60 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Kourabiedes?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Kourabiedes ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Kourabiedes vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Kourabiedes?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.
