Filo Pastry from Scratch

Twenty sheets thin enough to read through. Cornflour between the layers is the trick.

130 min A proper cook Vegetarian No oven needed

Ingredients

  • 240g plain flour
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 2 tsp apple cider vinegar
  • 180ml lukewarm water
  • Starch mix: 55g cornflour, 2 tbsp plain flour

Method

  1. Well in the flour, then oil, salt, vinegar and warm water, mixed to a dough.
  2. Knead 8-10 minutes until smooth and elastic, using as little extra flour as you can.
  3. Wrap and rest at room temperature 1-2 hours. Rested dough stretches; unrested dough tears.
  4. Divide into 20 balls of about 20g each and cover them.
  5. Mix the cornflour and flour for dusting.
  6. Roll each ball thin, dusting generously with the starch mix, then stack them and roll the whole stack together — that's how you get sheets you can see through.
  7. Peel apart and use immediately, or keep covered with a damp cloth.

Questions people ask about Filo Pastry from Scratch

How long does Filo Pastry from Scratch take?

About 130 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Filo Pastry from Scratch?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Filo Pastry from Scratch ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Filo Pastry from Scratch vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

Can I make Filo Pastry from Scratch without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.
