Ingredients

  • 1/2 cup moong dal
  • 3 cups vegetables (lauki, pumpkin, beans)
  • 1/2 cup grated coconut
  • 1 tsp cumin

  • 1 tsp urad dal
  • 15 curry leaves

  3. Combine dal, vegetables and paste, add a little water, simmer 6 minutes.
  4. It should be thick — this isn't a sambar.
  5. Tadka of mustard, urad dal and curry leaves in coconut oil, poured over.

Questions people ask about Kootu

How long does Kootu take?

About 30 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

Can I make Kootu ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Kootu vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Kootu?

Steamed rice with a spoon of ghee, and a papad if you have one. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
