Instant Rava Dosa

No soaking, no fermenting, no waiting. Batter to plate in twenty minutes.

20 min Some work Vegetarian

Ingredients

  • 1/2 cup rava
  • 1/2 cup rice flour
  • 2 tbsp maida
  • 1 onion, very finely chopped
  • 2 green chillies
  • 1 inch ginger
  • 20 curry leaves
  • 1 tsp cumin
  • 1 tsp black pepper, crushed
  • Oil

Method

  1. Whisk the flours with 3 cups water into a batter as thin as milk. It should be almost watery — that's what makes the lace holes.
  2. Stir in onion, chillies, ginger, curry leaves, cumin, pepper and salt. Rest 15 minutes, then stir again (it settles).
  3. Hot tawa. Pour the batter from a height in a circle from the outside inwards. Never spread it with a ladle.
  4. Holes will appear on their own. Fill any big gaps with a splash more batter.
  5. Oil around the edges, cook on medium-high 3 minutes till the base is crisp and lifts.
  6. Fold and serve immediately. It softens fast.

Questions people ask about Instant Rava Dosa

How long does Instant Rava Dosa take?

About 20 minutes from starting to sitting down, and it is a bit of work. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What is the one thing to get right in Instant Rava Dosa?

Hot tawa. Pour the batter from a height in a circle from the outside inwards. Never spread it with a ladle.

What can I use instead of rice in Instant Rava Dosa?

Use any long-grain rice. Basmati needs less water than most, so check the packet before following the ratio here.

Can I make Instant Rava Dosa ahead of time?

Not really. This one relies on being crisp, and crisp does not survive the fridge. Prepare the components ahead if you like, but cook it just before eating.

Is Instant Rava Dosa vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Instant Rava Dosa?

Steamed rice with a spoon of ghee, and a papad if you have one. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
