  2. Off the heat, stand a few minutes so the curds settle.
  3. Strain through a muslin bag and rinse briefly under cold water to take the sourness off.
  4. Press between two flat plates with a weight on top for 30 minutes.
  5. Cut into cubes. Fry them pale brown if the dish calls for it.

Questions people ask about Home-Made Paneer

How long does Home-Made Paneer take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of lemon in Home-Made Paneer?

Use lime, or 1 tsp vinegar in a pinch. Add acid off the heat either way.

Can I make Home-Made Paneer ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Home-Made Paneer vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

How long does home-made home-made paneer keep?

Depends what it is: pastes and stocks keep a few days refrigerated or months frozen in portions; dry mixes keep for months in a sealed jar.
