90 min A proper cook Vegetarian

Ingredients

  • Pastry: 1.5 cups maida, 120g cold butter, 1/2 cup icing sugar, 1 egg yolk
  • Custard: 2 cups milk, 4 egg yolks, 1/2 cup sugar, 3 tbsp cornflour, 1 tsp vanilla, 2 tbsp butter
  • Fruit: strawberries, kiwi, grapes, mango
  • 3 tbsp apricot jam to glaze

Method

  1. Blind bake the pastry case fully and cool completely.
  2. Custard: whisk yolks, sugar and cornflour. Pour the hot milk in slowly WHILE WHISKING, then return to the pan.
  3. Cook on medium, whisking constantly, until it thickens and bubbles once. It must boil to cook out the cornflour taste.
  4. Butter and vanilla off the heat, then press cling film directly onto the surface so no skin forms. Chill.
  5. Beat the cold custard smooth, spread in the case, arrange the fruit on top.
  6. Warm the jam with a splash of water and brush over the fruit. That glaze stops it drying out and is what makes it shine.

Questions people ask about Fresh Fruit Tart

How long does Fresh Fruit Tart take?

About 90 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Fresh Fruit Tart?

Warm the jam with a splash of water and brush over the fruit. That glaze stops it drying out and is what makes it shine.

What can I use instead of maida in Fresh Fruit Tart?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Fresh Fruit Tart ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Fresh Fruit Tart vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Fresh Fruit Tart?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Fresh Fruit Tart?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
