50 min Some work Vegetarian

Ingredients

  • 10 tortillas
  • 2 cans black beans or rajma
  • 3 cups grated cheese
  • For the sauce: 1 can tomatoes, 4 dried red chillies, 1 onion, 4 garlic cloves, 1 tbsp cumin, 1 tsp oregano
  • 1 capsicum, 1 onion, 1 cup corn
  • Curd, coriander

Method

  1. Sauce: soak the red chillies in hot water 10 minutes, then blend with tomatoes, onion, garlic, cumin, oregano and salt. Cook it in oil for 10 minutes — raw sauce tastes flat.
  2. Filling: fry capsicum, onion and corn, then mash in the beans with cumin and salt.
  3. Thin layer of sauce in the dish. Fill each tortilla, roll, and lay them seam side down, packed tight.
  4. Pour the rest of the sauce over, covering every edge — exposed tortilla goes hard.
  5. Cheese over the whole thing. 190°C for 25 minutes till bubbling.
  6. Rest 10 minutes. Curd and coriander on top.

Questions people ask about Enchiladas

How long does Enchiladas take?

About 50 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of cheese in Enchiladas?

Use any hard cheese that melts. Processed cheese melts smoothest, aged cheese tastes better.

Can I make Enchiladas ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Enchiladas vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

What do you serve with Enchiladas?

Curd and coriander on top. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
