Egg Ghotala

Mumbai street eggs — scrambled into a masala until nothing is distinguishable. That's the point.

20 min Easy Contains egg

Ingredients

  • 5 eggs
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 1 capsicum, chopped
  • 2 tbsp pav bhaji masala
  • 1 tsp red chilli powder
  • 3 tbsp butter
  • 8 pav
  • Coriander, lemon

Method

  1. Butter on a wide tawa, onions till soft.
  2. Capsicum, then tomatoes, pav bhaji masala, chilli powder, salt. Mash as it cooks, 6 minutes.
  3. Crack the eggs straight in and scramble hard into the masala. Keep breaking it up.

  5. More butter, coriander, lemon. Buttered pav on the side.

Questions people ask about Egg Ghotala

How long does Egg Ghotala take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of eggs in Egg Ghotala?

Use for binding, 1 tbsp besan whisked with 2 tbsp water per egg. For scrambles, crumbled firm tofu with a pinch of kala namak.

Can I make Egg Ghotala ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

What do you serve with Egg Ghotala?

Buttered pav on the side. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
