Akuri

Parsi scrambled eggs. Softer, richer, and better than any other version.

15 min Easy Contains egg

Ingredients

  • 6 eggs
  • 2 onions, very finely chopped
  • 2 tomatoes, deseeded and chopped
  • 3 green chillies
  • 1/2 tsp turmeric
  • 1/4 cup cream or milk
  • Coriander, a big handful
  • 3 tbsp butter
  • Pav or toast

Method

  1. Beat the eggs with cream, salt and turmeric.
  2. Butter, onions — cook slow and soft, 8 minutes, without browning.
  3. Green chillies, tomatoes, 2 minutes.
  4. Lowest possible heat, pour in the eggs. Stir constantly and slowly with a spatula.
  5. Take it off while it still looks too wet. Residual heat finishes it.
  6. Coriander folded in. Buttered pav.

Questions people ask about Akuri

How long does Akuri take?

About 15 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of eggs in Akuri?

Use for binding, 1 tbsp besan whisked with 2 tbsp water per egg. For scrambles, crumbled firm tofu with a pinch of kala namak.

Can I make Akuri ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

What do you serve with Akuri?

Buttered pav. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
