Crab Masala

Messy, hands-on and worth it. Forty minutes for something you'd rarely cook at home.

45 min A proper cook Non-vegetarian

Ingredients

  • 1kg crab, cleaned and cracked
  • 1/2 cup grated coconut
  • 3 onions
  • 3 tomatoes
  • 1 tbsp ginger-garlic paste
  • 2 tbsp coriander seeds
  • 6 dried red chillies
  • 1 tsp fennel
  • 1 tsp black pepper
  • 25 curry leaves
  • 4 tbsp coconut oil

Method

  1. Get the fishmonger to clean and crack the shells. Cracked shells let the masala get inside, which is the whole reason to make this.
  2. Dry roast the coriander, chillies, fennel, pepper and coconut, then grind to a paste.
  3. Coconut oil, curry leaves, onions till golden, ginger-garlic paste.
  4. Tomatoes and salt, cooked till the oil separates.
  5. Ground paste, fried 5 minutes, then 1.5 cups water.
  6. Crab in, covered, 15 minutes. It's done when the shells turn bright orange. Napkins, and a lot of them.

Questions people ask about Crab Masala

How long does Crab Masala take?

About 45 minutes from starting to sitting down, and it is a proper cook. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of onion in Crab Masala?

Use shallots, which are sweeter, or leeks for a milder result. Neither browns quite as deeply.

Can I make Crab Masala ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Crab Masala vegetarian?

Yes. Replace the crab with king oyster mushrooms torn into chunks, or firm tofu pressed dry. Both want a hard sear first, and both go in at the very end, because neither needs more than a couple of minutes.

What do you serve with Crab Masala?

Steamed rice with a spoon of ghee, and a papad if you have one. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
