35 min Some work Non-vegetarian

Ingredients

  • 600g fish steaks
  • 3 tbsp kashmiri chilli powder
  • 1 tsp turmeric
  • 1 tbsp coriander powder
  • Lemon-sized tamarind (or 4 pieces kudampuli)
  • 1 inch ginger, 8 garlic cloves, minced
  • 1 tsp fenugreek seeds
  • 1 tsp mustard seeds
  • 25 curry leaves
  • 4 tbsp coconut oil

Method

  1. Traditionally made in a clay pot, and it does taste better in one if you have it.
  2. Coconut oil, mustard and fenugreek seeds, then curry leaves, ginger and garlic.
  3. Take the pan off the heat before adding the chilli powder, turmeric and coriander powder — they scorch in seconds. Stir, then return to low.
  4. Tamarind water and 1.5 cups water, salt. Boil 10 minutes till it thickens slightly.
  5. Slide the fish in. Shake the pan, never stir. 8 minutes.
  6. Rest at least 30 minutes before eating. Overnight is better. Rice or tapioca.

Questions people ask about Kerala Meen Curry

How long does Kerala Meen Curry take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Kerala Meen Curry?

Slide the fish in. Shake the pan, never stir. 8 minutes.

What can I use instead of fish in Kerala Meen Curry?

Use any firm white fish, or paneer for a vegetarian version. Avoid delicate fish in anything that needs stirring.

Can I make Kerala Meen Curry ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Can I make Kerala Meen Curry vegetarian?

Yes. Replace the fish with king oyster mushrooms torn into chunks, or firm tofu pressed dry. Both want a hard sear first, and both go in at the very end, because neither needs more than a couple of minutes.

What do you serve with Kerala Meen Curry?

Rice or tapioca. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
