Chilaquiles

Tortilla chips simmered in salsa with a fried egg on top. Fifteen minutes.

20 min Easy Contains egg

Ingredients

  • 4 cups tortilla chips
  • 6 tomatoes
  • 4 dried red chillies
  • 1 onion, 4 garlic cloves
  • 4 eggs
  • 1 cup grated cheese
  • Curd or sour cream
  • Coriander, raw onion
  • Oil

Method

  1. Salsa: boil the tomatoes with the dried chillies, onion and garlic for 10 minutes, then blend with salt.
  2. Fry the salsa in 2 tbsp oil for 6 minutes until it darkens and thickens. Raw blended salsa tastes thin.
  3. Fry the eggs separately, runny yolks, crisp edges.
  4. Tip the chips into the hot salsa and toss for 60 seconds only. Any longer and they turn to porridge — you want them coated but still with some snap.
  5. Straight onto plates. Egg on top, cheese, curd.
  6. Raw onion and coriander. Eat immediately.

Questions people ask about Chilaquiles

How long does Chilaquiles take?

About 20 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of tomato in Chilaquiles?

Use canned chopped tomatoes, roughly 1 can per 4 fresh. Add a pinch of sugar to offset the acidity.

Can I make Chilaquiles ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

What do you serve with Chilaquiles?

Warm tortillas, lime and something pickled. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
