120 min A proper cook Vegetarian

Ingredients

  • 165ml lukewarm milk
  • 7g dried yeast
  • 320g strong white bread flour
  • 215g plain flour
  • 1/2 tsp sea salt
  • 150g aquafaba
  • 3 tbsp caster sugar
  • 200g butter, softened
  • Wash: 3 tbsp milk, 1/2 tsp maple syrup, 1 tsp oil

Method

  1. Bloom the yeast in the warm milk for 5 minutes.
  2. Mix both flours and the salt separately.
  3. Milk mixture, aquafaba and sugar in a stand mixer with a dough hook until smooth.
  4. Dry ingredients added gradually, kneaded 5-8 minutes until smooth and elastic. Rest a few minutes if the dough feels warm.
  5. Butter added a little at a time, each addition fully worked in before the next. It will look like a greasy mess — keep going.
  6. Ten more minutes of kneading until glossy.
  7. Prove until doubled, shape into a loaf tin, prove again.
  8. Brush with the milk wash. 180°C for 35 minutes.

Questions people ask about Brioche

How long does Brioche take?

About 120 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Brioche?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Brioche ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Brioche vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Brioche?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.
