25 min Some work Vegetarian

Ingredients

  • 8 slices bread
  • 3 potatoes, boiled and mashed
  • 1.5 cups besan
  • 1 tsp ajwain
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric
  • 1 tsp amchur
  • 2 green chillies
  • Green chutney
  • Oil to fry

Method

  1. Filling: mashed potato with green chillies, amchur, chilli powder, coriander and salt.
  2. Batter: besan with ajwain, turmeric, chilli powder, salt and water. Thick enough to coat a spoon and stay — thin batter slides off and the bread soaks oil.
  3. Spread chutney on two slices, potato between them, press and cut diagonally.
  4. Dip each triangle fully in the batter.
  5. Hot oil, fry till deep golden, 3 minutes a side. Medium-hot, not smoking.
  6. Drain on a rack. Chutney and chai.

Questions people ask about Bread Pakora

How long does Bread Pakora take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of bread in Bread Pakora?

Use any loaf that is a day old. Fresh bread turns to paste in most of these.

Can I make Bread Pakora ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Bread Pakora vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Bread Pakora?

Chutney and chai. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
